Nikuya offers a refined rooftop sushi experience in Fort Worth

Nikuya, a warm, refined rooftop sushi bar atop The Sinclair Hotel at 512 Main Street, is now open in Fort Worth.


The restaurant comes from DRG Concepts, the locally rooted restaurant group known for the acclaimed Wicked Butcher, Wild Salsa, and Chop House Burger.


Nikuya balances the precision of Japanese culinary tradition with the welcoming, easy sophistication of Fort Worth. Perched above the city, the restaurant offers an intimate rooftop dining experience centered around craft, connection, shared plates, and thoughtful pacing.


“Fort Worth has a definitive, wonderful way of bringing people together. Fort Worth is warm, stylish, and our community knows how to enjoy a good meal,” said Nafees Alam, CEO of DRG Concepts.  “With Nikuya, we wanted to create a place where that spirit comes alive on the rooftop— a place that feels relaxed, connected, and crafted with care. The experience is Japanese technique expressed with Fort Worth heart.”


The culinary philosophy at Nikuya celebrates purity of flavor, exceptional sourcing, and quiet confidence. Fish is flown in from Japanese and global waters known for quality and consistency. Rice is prepared in small batches throughout service to maintain warmth and texture. Seasonal garnishes and sauces are subtle, balanced, and designed to enhance — not overshadow.


Signature Nikuya dishes include Tuna Tartare, Hokkaido Scallop Crudo, and The Nikuya Cut Roll.


Nikuya’s beverage program features curated sake, Japanese whiskies designed for sipping, and cocktails that are bright, layered, and precise — intentionally crafted to complement raw fish rather than compete with it.


The Nikuya environment and space blend contemporary Japanese minimalism with Fort Worth warmth: matte stone, natural woods, sculptural lighting, and skyline views that shift with the evening. Intimate without being formal; stylish, without being loud.


Nikuya is open Tuesday – Thursday 5 pm – 9 pm; Friday and Saturday  5 pm – 12 am
